1 cup cooked rice
3 sliced zucchini
1-7 oz can whole Ortega chilies
1 1/2 cups grated jack cheese
2 cups sour cream
1 tsp. garlic salt
1 tsp. oregano
1/2 cup chopped onion
2 tablespoons parsley flakes
Directions:
Grease a 9 x 13 casserole dish. Place cooked rice into dish and spread evenly.Cover with chili strips. Sprinkle with half of the cheese. Add layers of sliced zucchini. Combine sour cream with the rest of the ingredients and mix well. Spoon evenly over zucchini layer. Sprinkle with remaining cheese and bake at 350 degrees for 45 minutes. Sprinkle with parsley flakes and serve.
