Cooking With Rich: Flank Steak Salsa Verde Recipe

Recipe: Marinated Flank Steak Topped with Salsa Verde

Rich Aurilia’s Recipe for Marinated Flank Steak Topped with Salsa Verde served with Red Stitch Wine.


Red Stitch is the creation of three families, woven together by a shared passion and goal to experience exceptional wine with those who mean the most.

Part 1: Flank Steak Marinade

Ingredients:

  • Equal Part Soy sauce
  • Equal Part Balsamic vinegar
  • Equal Part Olive oil
  • 4 cloves garlic (diced)
  • Salt and pepper

Directions:
Combine all ingredients into a bowl and mix. Marinate meat anywhere from 1 to 12 hours.
Before grilling, take the marinated meat out of the refrigerator and let stand at room temperate for at least 3 minutes. Grill the steak to your liking.

Part 2: Salsa Verde

Ingredients:

  • 1 bunch of fresh parsley
  • 2 shallots
  • 1 clove of garlic
  • 1 medium lemon (zest and juice)
  • 1 ½ teaspoon of salt
  • 1 cup of grape seed oil

Directions:
Place all ingredients in a food processor and blend until smooth.
Great over steak, seafood, and pork!

Rich Aurilia: MLB Star, Entrepreneur, & Chef

“My Mom and Dad worked and they had to find someone to watch me so they found our neighbor, an Italian immigrant woman, also known as, ‘the Nonna.’ Everyday everything was homemade and in the summers I remember she would make her own tomato sauce and pasta to last the whole year. So I would be the one to crank the tomatoes through the machine and that’s were I initially got my love of cooking. And now after retiring from baseball, I am still doing it and I am enjoying it”

Born in Brooklyn, New York in 1971, Rich Aurilia made his major league début with the 24th round pick of the Texas Rangers in the 1992 MLB Draft at age 21 after a successful baseball career in high school and college, playing shortstop. Aurilia proved himself within the minor league system that lead to his trade to the San Francisco Giants in 1994.
From his MLB début on September 6, 1995, to his very last MLB appearance on October 4, 2009, with the San Francisco Giants as #35, Rich Aurilia had a batting average of .275, with a staggering 186 home runs, and 756 runs batted in. Furthermore, Rich Aurilia was an everyday lineup player, also playing for the San Diego Padres and even signed a minor league contract with the Reds before he resigned with the San Francisco Giants.

In 2010, Aurilia received standing ovations during his last game against the Arizona Diamondbacks from thousands of Giants fans that all grew to absolutely love him throughout the 15 years he played with the club. Aurilia then officially announced his retirement on April 11, 2010.
Nonetheless, retirement can be rather devastating for many professional athletes if they do not acquire any other passions in their life other than the sport they dedicated the majority of their life to. Luckily for the All-star baseball player, Rich Aurilia, found his passionate love for the art of cooking after retirement as an executive chef. As a matter of fact, the pique of Aurilia’s interest as a cook started at a very young age.
