Country Blueberry Muffins

Ingredients:

  • 2 c. flour
  • 1 tbsp. baking powder
  • 1/2 tsp. salt
  • 1 large egg
  • 1 c. sugar
  • 4 tbsp. unsalted butter, melted and cooled slightly
  • 1 1/4 c. sour cream
  • 1 1/2 c. frozen blueberries

Directions:
Combine dry ingredients and set aside. Combine eggs and sugar in another bowl. Whisk thoroughly. Add butter and sour cream. Mix well. Combine frozen blueberries with dry ingredients and toss together. Fold the wet ingredients into the dry blueberry mixture. Do not over mix! Fill greased muffin tin about three-fourths full with batter and bake at 350 degrees for 25-30 minutes.
