Country Roasted Vegetables

Ingredients:
6 baby red potatoes, cut in half
1 small bag baby carrots
1 large onion cut into chunks
olive oil
salt
pepper
1-2 tsp. dried parsley or any other herb that you like!
Directions:
Preheat oven to 475 degrees. Place all cut up veggies on a large cookie sheet. Drizzle with olive oil to coat well. Sprinkle with salt, pepper and dried herb(s). Using your hands, toss together on cookie sheet until everything is completely coated. Place in oven for about 20 to 25 minutes or until tender and browned. Place veggies on a platter covered with paper towels to absorb any excess oil.  Serve warm. You can do this with any of your favorite veggies!
