Easy Summer Salad

Oh my goodness, crunchy, a little sweet and simple dressing makes this Easy Summer Salad one of the most refreshing salads.  No need for any lettuce in this salad as the ingredients alone is just what the doctor ordered.
I love this salad with a grilled steak, I even use it like a salsa to pour over my steak.  Every bite is precisely the perfect bite.
By adding different types of herbs to this salad, is a nice twist.  I like to add fennel or fresh basil with it, as it brings out more flavors in the vegetables.
 Should you want a Mexican version add chopped garlic with cilanthro, yum, yum!
Colorful Ingredients:

  • 1 container grape tomatoes
  • 2 ripe avocados
  • 1/2 red onion, sliced thin
  • 1/4 c. olive oil
  • 1/2 c. rice vinegar
  • Season salt and black pepper to taste

Effortless Directions:
Cut tomatoes in half and slice avocados. Place in salad bowl with the rest of the ingredients. Toss with olive oil and vinegar. Serve immediately. Enjoy!!
