Start by soaking beans overnight. After draining and rinsing beans, place in a large pot and cover with water. Add can of beer, chopped onion ham hock, bay leaf and salt & pepper to taste. Bring to a boil and then simmer for about 2-3 hours or until beans are tender. If necessary you can add more water as the beans are cooking. When beans are done, remove ham hock and let cool. Using a fork, take off any meat and add it back into the beans. Stir and serve warm with tortillas. Enjoy your Cowboy Beans!
