Pecan Butterscotch Cookies

Ingredients:
1 cup complete buttermilk pancake mix
1 small package instant butterscotch pudding mix
1/3 cup melted butter
1 egg
1/2 cup white chocolate morsels
1/2 cup toasted, chopped pecans
Directions:
In a large bowl, combine pancake mix, pudding mix, butter and egg. Beat until well combined.  Stir in white chocolate morsels and pecans. Chill dough for 30 min.
Pre-heat oven to 350 degrees. Roll dough into 1-1/2 inch balls and place 2 inches apart on a greased baking sheet. Gently flatten with the bottom of a drinking glass.
Bake for 8 – 10 minutes or until edges start to brown. Remove and cool on a wire rack. Makes about 1 1/2 dozen cookies.
