Recently, the Cowboy Lifestyle Network team had the opportunity to visit the Ak-Chin Indian Community’s Vekol Market and meet with Norm Potter, manager and Mark Alcala, deli manager and chef, to discover what makes the market and menu unique.
The CLN team learned that all the menu items at the Vekol Market are inspired by their customers. Vekol Market always offers one daily lunch special, which always has the possibility of being added to the set menu, based upon the customer popularity. From mouth-watering breakfast items such as custom breakfast burritos, omelets, burros, pancakes, and muffins, to delicious lunch plates including deli sandwiches, various Mexican dishes, and juicy hamburgers, the Vekol Market is a place that you will not want to visit just once.
The staff at the Vekol Market Deli takes pride in their fresh, never-frozen hand-made famous hamburgers that are subtly seasoned to bring out flavorful juiciness and served on a fresh-baked bun with lettuce, tomato, and onion.
The Cowboy Lifestyle Network team had the opportunity to sink their teeth into the hamburger and also the special of the day, Torta de Barrira, a sandwich made with pinto beans, skirt steak, grilled onion, tomatoes, and green chili. The team agreed that both dishes were amazing and will most definitely have lunch at Vekol Market again.
The bakery at the Vekol Market is also a wonderful sight! Their muffins, inspired by the café staff, cover the gamut from savory to sweet and are created with several different, non-traditional ingredients including sausage and cheese, green chili corn, carrot cake, German chocolate cake, and fruit.
Another special trait that the team discovered about the Vekol Market is their Smoke Shack. The Vekol Smoke Shack, also used for catering, is the place where the meats from the market are smoked and barbecued.
