Country Mexican Salad

  • 1 head shredded red leaf lettuce
  • 2 avocados, diced
  • 1 can light red kidney beans
  • 1 cucumber diced
  • 1 small can black olives
  • 1/2 cup shredded cheddar cheese
  • Mexican salad dressing (recipe to follow)
  • 1 small bag tri-colored tortilla strips

Country Mexican SaladClean and tear lettuce. Drain and rinse can of kidney beans and can of black olives. Put all ingredients in large salad bowl, except tortilla strips, and toss well with dressing. Garnish with tortilla strips.

 

Salad Dressing

  • ½ cup seasoned rice wine vinegar
  • ¾ cup canola oil
  • ¼ teaspoon black pepper
  • ¼ teaspoon cumin powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon red chili powder
