With Summer upon us, this salad is a great choice for a main dish! We have made this several times and love the light dressing and the protein we get from the fish. Easy to make, yet looks like you spent hours preparing it! Love! Love! Love!
Ingredients:
- 1/3 cup orange juice
- 1 tablespoon chopped shallots
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- 1/8 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 to 3/4 salmon fillet – 1 to 1/2 inch thick
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
- 1 large sweet onioncut into 1/2 inch slices
- 8 cups romaine or mixed green salad
- 1 jar red grapefruit sections, drained
Directions:
Heat grill pan to medium high. In a small bowl, combine orange juice shallots, honey, oil, mustard, salt and pepper. Whisk together until well blended. Set aside for dressing the salad later.
Sprinkle salmon with salt and pepper. Carefully brush oil on grill pan. Spray salmon and onion slices with cooking spray.Place salmon and onions on grill pan and cover with lid. Cook 10 min., turning once. When fish flakes easily it is done.
Cut onion into bite size chuncks. Break fish into chunks. Divide salad greens among serving plates and top with fish, onion and grapefruit sections. Drizzle with vinaigrette.
