This Shrimp Ceviche recipe will knock anyone’s socks off. Impress your guests with this recipe that is going to blow them away!
Ingredients:
1 lb Desert Sweet Shrimp
6-8 lemons (juice of lemons)
1 lb tomatoes – 1/4 inch diced
1/4 cup celery – finely diced
1 or 2 jalapenos – small diced
1/2 cup red onion – finely diced
2 tblsp minced garlic
2 tblsp chopped cilantro
1/4 tsp black pepper
1 tblsp salt
Directions:
Thaw shrimp under cool rnning water, drop into boiling water for 1-2 minutes. Place in ice water, remove and mince or rough chop. Mix the above ingredients and chill for 3-4 hours before serving. Goes great with fresh corn chips or on a tostada shell topped with sliced avocado.
