Taste Tequila Comisario

Tequila Comisario has beauty not only in the one-of-a-kind bottle but also within the tequila itself. Tequila Comisario is made from agave plants some being 8,000 feet in elevation located in the Highlands (Los Altos) of Jalisco, Mexico then fermented in a unique process. This tequila will have your palate savoring the creamy smoothness in each drink. It’s safe to say Tequila Comisario is made with love and has won the hearts of tequila connoisseurs throughout the world. 

The Process

Tequila Comisario was created by Dr. Morita and the Aceves family. The harvesting process starts with agave plants from their standard 7 to 8-year harvesting model. It then proceeds to the slow cooking process of 18 hours which focuses on the fermentation and distilling of each plant. This process is always focused on quality and never quantity. As this process continues, it focuses on a unique extraction process by separating the juice from its impurities. This allows for a unique tasting experience on a beautiful mixture of flavors and nodes to accentuate the middle of the batch spirit. Each batch is placed into a steel tank for 36 hours of oxygenation upon the finalization of the extraction process. Lastly, Tequila Comisario completes the final process based on the unique flavors of tequila. Blanco serves as the base to conclude the process for Añejo and Reposado Tequilas. The Añejo is aged for 23 months with the last 4 months of those 23 is finished in a California Cabernet Sauvignon barrel to give it complexity. The Reposado is aged for 7 months. Tequila Comisario uses 2-year or older barrels to insure the soft impact of the barrel notes (wood, vanilla, nougat, honey, etc.). This is to achieve a beautiful balance between agave fruit notes (pepper, earth, spice) and barrel notes.

Blanco

Tasting Notes: Clear. Aromas of spun honey, waxy pear and apple, roasted pepper, and delicate herbs. A soft, silky entry leads to a delicate, dryish light-to-medium body with dried apple, mineral, yellow pepper, and acacia honey flavors. Finishes with a long, elegant, gentle spicy fade. A superb sipping tequila.

Reposado

Tasting Notes: Pale golden amber color with a silvery cast. Pineapple creme brulee, dried tropical fruit, nougat, dried flowers, and spice aromas follow through on a soft, satiny entry to a dry-yet-fruity medium-to-full body with anise cookie, herb, and grilled pepper accents. Finishes with a long, spicy-sweet buckwheat honey and talc fade. A delicious, delicate, yet decadent reposado best enjoyed neat or on the rocks.

Añejo

Tasting Notes: Pale golden amber color. Buttercream, dried papaya, caramel custard, and nougat aromas follow through on a supple, silky entry to a dry-yet-fruity medium-to-full body with lovely grilled pepper, mineral, and mocha accents. Finishes with a long, cocoa and pepper spice fade with balanced warmth. An excellent sipper.

Extra Añejo

Tasting Notes: Wonderful subtle notes of Agave spice, earth, and pepperiness along with layered notes of vanilla, wood, caramel and spun honey from barrel exposure– achieving a great balance between oak and fruit.
